Our Story

Manuka was born from a shared vision between two siblings, Estelle and Sergio, who dreamed of transforming how people experience food. The idea was simple: to create a space where food not only delights the senses but also nourishes the body and respects the planet. Manuka quickly became more than just a restaurant after opening its first location in 2016; it evolved into a movement toward a conscious and healthy lifestyle.

From its humble beginnings, Manuka has grown and evolved, expanding its reach with five locations along the coast and a central production facility in Monda. This facility not only allows Manuka to maintain total control over the quality and freshness of its ingredients but also serves as a testament to its commitment to sustainable and ethical practices.

Our culinary philosophy focuses on offering fresh and healthy dishes by prioritizing local and seasonal products, ensuring freshness, flavor, and optimal phytonutrients.

In line with our dedication to conscious eating, health, and sustainability, the vast majority of our dishes are prepared in-house using whole food ingredients. From authentic hand-pressed tacos made with non-GMO corn to honey syrups and salad dressings made with organic olive oil, each choice reflects our deep commitment to human and business values that aim to contribute to the well-being of the planet.

At Manuka, we are dedicated to responsible and ethical sourcing, selecting suppliers who share our passion for quality and sustainability. We take pride in partnering with small local producers who, like us, believe in the positive impact of conscious production. One example is Loch Duart, a small fishery on the northern coast of Scotland, known for its sustainable approach and salmon welfare without the use of antibiotics. This approach not only ensures the freshness and authenticity of our ingredients but also supports the local economy and promotes sustainable farming practices. At Manuka, every ingredient tells a story of commitment and care, from the field to your plate.

From farm to fork

OUR PRODUCTION CENTER

We transformed an old cheese factory in Monda into a modern eco-kitchen, an essential part of our mission to provide an authentic farm-to-table experience for our customers. At our center, which produces for our restaurants, most of our menu is made with fresh vegetables and produce grown by local farmers near our establishment in the picturesque Sierra de las Nieves mountains. These farmers are deeply committed to sustainable practices and organic farming methods.

Moreover, producing in large batches allows us to take advantage of seasonal ingredients when they are at their best, both in flavour and nutritional value. This not only supports the local economy but also enables us to produce nearly all of our products in our own facility, crafted by our artisans, according to our strict quality standards, without relying on conventional suppliers.
